- Red Chilé: Enchilada sauce of fresh ground dried chilis & spices
- Chorizo: Mexican sausage
- Fideo: Vermicelli New Mexican style pasta. Very different and very good!!
- De la olla: “From the kettle”
- Tamales: Seasoned meat rolled in corn meal dough, wrapped in cornhusks & steamed
- Taquitos: Crispy rolled tacos
- Papitas: Potatoes
